This course, "Bats, Ducks, and Pandemics: An Introduction to One Health Policy", provides an interdisciplinary overview of the concept of One Health and its application to public health, public policy, and food safety and security. Students will learn about the link between human, animal, and environmental/ecosystem health, and how this concept can be used to analyze government policies to determine their effectiveness in improving health and well-being. The course will cover topics such as basic epidemiology, public health, public policy, basic microbiology, food safety and security, zoonotic diseases, sanitation and hygiene, antimicrobial resistance, environmental and ecosystem health, and the national and international organizations that oversee health, agriculture, and the environment. Disease outbreaks including Influenza, Q fever, and Ebola will be discussed, as well as the COVID-19 pandemic. The course emphasizes holistic, not siloed, approaches to health, and disease.

The application of this course can be seen in the development of policies that take into account the interconnectedness of human, animal, and environmental health. It can be used to analyze existing policies to determine if they are effective in improving health and well-being. It can also be used to develop new policies that address the complex health issues such as food safety and security, emerging and vector-borne diseases, and antimicrobial resistance.
